Albacore tuna, known to the Spanish as "bonito del norte", are harvested in the Spring from the Bay of Biscay. The fish is hand trimmed, quickly cooked in salty water, hand packed, topped with olive oil. Clean, meaty texture with long depth of flavour and appealing aroma.
